I found this
recipe on facebook and tweaked a little to make it egg free.
Ingredients:
1 cup peanut butter
½ cup cornstarch
½ tsp xanthan gum
1 tsp baking soda
3 Tbsp water
1 cup unrefined sugar
1 tsp molasses (optional)
½ tsp vanilla
1 cup chocolate chips
Preparation:
Heat oven to 350F.
Mix all ingredients with a wooden spoon until well combined.
Separate dough into small balls and place on greased cooking
sheet.
Press each ball gently and bake for 15 minutes.
Let cool and serve.
Variations:
Replace cornstarch, xanthan gum and water with one egg.
