Chocolate Cupcakes (Gluten free, dairy free)






Ingredients
5 eggs
½ cup oil
1 cup almond milk
1 cup brown rice flour
¼ cup oat flour
1 cup sugar
½ cup cocoa powder
¾ tsp baking soda
¼ tsp baking powder
½ tsp Xanthan Gum
½ tsp vanilla extract
 


Directions:
Preheat oven to 350F. Grease muffin pan and set aside.

In a bowl, add the eggs, oil, and sugar.  Whisk until combined. Add flours, cocoa powder, baking powder, baking soda and xanthan gum, and incorporate well until there are no lumps. Add almond milk and vanilla, and mix through.

Add batter to the prepared pan and bake for about 20-25 minutes or until a cake tester comes out clean. 

Remove from oven and let the cupcakes cool.

* If you use a blender, mix all the ingredients in blender for about 1 minute. Then pour mix into muffin pan.
 
*Yields about 24 cupcakes.
